Chicken Cordon Bleu

Ingredients:

  • 1 Chicken breast
  • 1 slice of ham
  • 1oz Cheese - use a stretchy cheese
  • My Favourite Breading
  • 1 Egg - beaten

Preheat oven to 350F. Slice the chicken lengthwise to open a pocket for the ham and cheese. Wrap a stick of cheese with the ham and insert into the chicken (this will help keep the cheese inside the chicken). Heat a pan with desired amount of oil to flash-fry the chicken. Dip the stuffed chicken into the beaten egg. Drain excess egg. Carefully coat the chicken with My Favourite Breading. Carefully place the chicken in the sizzling oil and fry on all sides until golden. Place chicken on a baking sheet and bake for 10-15 mins until internal temperature is 165F. Cut and serve with desired side dishes.

Variations:

Have fun stuffing your chicken with other goodies like: sautéed spinach, goat cheese, chorizo,   bacon, sundried tomato, feta, pesto, roasted garlic etc.

Eggplant Parmesan

Ingredients:

  • 2 Slices of Eggplant   - sliced diagonally
  • 2oz (60ml) Marinara sauce
  • 2oz (60ml) shredded cheese – mozza, havarti, or fontina work great
  • 0.5oz (15ml) shredded parmesan cheese – fresh is best
  • My Favourite Breading
  • 1 - Egg (beaten)

Preheat oven to broil low. Place the oven rack to a higher setting under the heating element. Slice the eggplant diagonal in 2cm (1"inch) steaks. Heat a pan with desired amount of oil to set the breading.  Dip the eggplant steaks into the beaten egg. Drain excess egg. Carefully coat the eggplant with any flavor of My Favourite Breading. Carefully place the eggplant in the sizzling oil and sear until both sides until golden. Place eggplant on a baking sheet. Spoon 1 oz of  marinara on each piece of eggplant.  Sprinkle both cheeses evenly over the eggplant. Place on the top shelf in your oven and broil until the cheese is melted, bubbly and golden. Do not walk away!  This happens pretty fast. Serve with a delicious salad.

Encrusted Halibut

Ingredients:

  • 4oz Halibut – any white fish will also work. Tilapia, Snapper, etc
  • My Favourite Breading
  • 1 - Egg (beaten)

*Depending how thick the fish fillet is, you may not need to bake your fish. For best results, always use a food thermometer.

Preheat oven to 350F. Heat a pan with desired amount of oil to set the breading. Dip the fish into the beaten egg. Drain excess egg. Coat the fish with any flavor of My Favourite Breading. Place the fish in the sizzling oil and sear until both sides until golden. If necessary, place fish on a baking sheet and bake until internal temperature of 145F.

Spicy Tofu

Ingredients:

 

  • 6oz Tofu – We prefer medium firm
  • My Favourite Breading
  • 1 - Egg (beaten)
  • Dipping sauce

Heat a pan with desired amount of oil to set the breading. Cut the tofu into larger desired chunks. Dip the tofu into the beaten egg. Drain excess egg. Coat the tofu with any flavor of My Favourite Breading. Place the fish in the sizzling oil and sear until all sides until golden.
